Kefalotyri (ke-fah-loe-TEE-ree)

 
 

Kefalotyri is one of the oldest cheeses in Greece and the most traditional hard cheese. It’s color is a hue between yellow and white . Kefalotyri is usually produced from sheep’s milk or from a combination of sheep’s and goat’s milk. Kefalotyri is usually quite salty and hard, with a sharp flavor and dry texture. It is consumed mainly as a grating cheese (over pasta for example) but also as a table cheese and is excellent pan – fried as for the Greek specialty saganaki.
