Feta is being produced in Greece since the ancient times. It’s the most well known greek traditional cheese and exclusively Greek. In 2005, after sixteen years of debate, the European Union’s highest court decreed that “feta” is protected as a traditional Greek product, and that none of the other EU member nations can use the name. It is a Protected Designation of Origin product and can be produced only in Macedonia, Thrace, Epirus, the Peloponnese, Mainland Greece, and Lesvos.

Feta by law is produced from either 100% sheep’s milk or a combination of sheep’s and goat’s milk and matured traditionally in salt for at least two months before consumption.

 

Description

Feta does not have a rind or outer hard layer and is usually pressed into square or rectangular blocks. It dries out and sours quickly when removed from its brine; for that reason, blocks of packaged feta cheese are covered with brine, and should be stored, refrigerated, in the brine until used.
