White goat’s cheese

White goat’s cheese is a traditional white cheese with slightly spicy taste made exclusively from pasteurized goat’s cheese. In the most simple form, goat cheese is made by allowing raw milk to naturally curdle, and then draining and pressing the curds.

Goat’s milk contains more fatty acids and a lower percentage of lactose than cow’s milk contributing this way to the characteristic tart flavor of goat’s milk cheese. This cheese has both an earthy flavour and a firm texture Goat cheese softens when exposed to heat, although it does not melt in the same way many cow cheeses do.
