PGI means Protected geographic Indication and refers to agricultural products tied historically or traditionally to and produced in a specific place. Such products are characterized by specific qualities relating to the place or its traditions. Although PGI is a slightly less rigorous designation than PDO, products with the PGI insignia are processed and packaged in the area, too. *However, PDO and PGI olive oils, while having to derive from specifically designated areas, do not have to be processed or packaged in those areas. Wines and cheeses are subject to much stricter processing rules. This has to do with the practicalities of pressing olives and the prevalence or lack thereof in certain areas, even if they are PDO/PGI.
