These peppers come from Florina in Northern Greece and they are red with sweet or spicy fruits. Florina peppers, famous for this rich sweet flavour are usually roasted and stuffed with a combination of foods (cheese, rice, meat, etc). Perfect for salads and part of sauces, they are also pickled in olive oil & vinegar and exported worldwide. They are a delicious meze for tsipouro while when drained they produced a hot local spice of the Balkans called bukovo.
